How deep universe is same as here. in billions of years, didnt universe changed.?

with our telescopes, i think we are able to see billions of lightyears away. as a result, we are wathcing how the universe was 5 or 6 billions years away. but galaxies are still same. stars are same. didnt anything changed in the last some bilions years. why we cant see the answer of, how galaxies evolved.
